What accounts for the wildly different cost for a pack of 2 jars - ie $14.23 vs $79.99?

It is possibly a scam. You should definitely read the seller's reviews before buying from the seller with a very high price. We do know that this product is out of stock with our current distributor for a couple of months as of Feb 2022, so the price could also be high because of supply issues.

I’ve never heard of this mustard, is it as hot as amora or maille? i am looking for the hottest for my salad dressing.

Not really hot just the best mustard flavor I ever had I use it on everything that you might put mustard on and then everything else too.
