I get crazy temps on my new ender 3 pro. When printing at 200c it's +- 5c and occasionally drops to 130 then up to 250. thistemp sensor gone perhaps?

The thermistor has either come loose or is defective. thermistors are very cheap so probably best to get a new one. Bought mine on ebay and just put it back same as the old one

Is this ok for the CR10s Pro version?

Yes should be fine, creality use 100ohm thermistors and they are a bargain for that price. On eBay they are £5 each. Just be careful fitting don’t over tighten the screw on the hot end. If the plug doesn’t fit just roll back the cable sheath as fair as you can cut the two wires staggered so connections aren’t together and solder. Doesn’t matter which white wire goes to which as they are a loop. If the temp on the panel is reading mega high you’ve shorted it out or damage the cable. Connect cables and and test. Then fit to hot end.

Can these be used on the cr-6se hotend?
