Why use Xanthan gum? It wasn't there 30 years ago.

This is an interesting question. Essentially, here's the scoop. Xanthan gum is a common food additive in everything from sauces and dressings to ice cream and yogurt and, of course, gluten-free baked goods. In most cases, it's used as a thickening agent or stabilizer to prevent the separation of ingredients (like yogurt). For a more definitive answer, I suggest you look on the label and find the 1-800 number and ask your question. I presume that this is a stabilizer that wasn't available 30 years ago. Best wishes, JJares
