Is it possible to have 3 receivers in the same room? I assume I would need to change each to be on a different frequency/channel, is that possible?

You can have 2-3 transmitters in the same location, as far as keeping them 3 feet apart from each other. No need to re-program them.

I ordered the set of 4 earphones with the transmitter for a silent disco experience and now need to order 4 additional earphones which do I order?

Here is the additional headphones for Quartet - https://www.amazon.com/dp/B09DKS353X

How adjustable are the headphones? I'm looking for something that my young children can use and grow into.

Adjustable to fit kids to adults

Is it possible for my wife to listen from TV speaker while I listen through headphones?

Yes that should not be a problem. I am able to use the headphones as well as my sound bar and TV speakers.
