Amazing, heart healthy cookbook with easy recipes!
This is an incredible and informative cookbook. I have gifted it to family and friends for heart healthy and delicious recipes. Breakfast, lunch, dinner, snacks, dressings and more. Highly recommend the collard sushi recipe for events! Big hit.

Eat to Live with this book
Most folks live to eat, which means the food will kill them over time. This book speaks the truth about what you need to eat to live a healthy life. Good recipes that are easy to make
To preface my review, I have already read several books such as "Prevent and Reverse Heart Disease", "Forks Over Knives", "The Spectrum", etc. The point is that I was looking for a good cookbook to go with the knowledge I had already learned that plant based low oil eating was the way I wanted to go for my health and the health of my family. We are somewhat picky eaters and really do not care for overly fancy or fussy food. This cookbook fulfilled our needs very well. The beginning of the book has a 12-step program for plant perfect eating. It pretty much sums up, in 3 pages, most of the books I have read on plant based eating without all of the scientific explanations. The next section of the book covers some basics, such as how to use tortillas to make taco shells, how to cook kale, how to roast red peppers, and more. Some people may find that useful, others have already mastered that. Either way it's worth a look. Next there is a Q&A with Dr. Esselstyn Jr. It is about 6 pages long. It answers what I would assume are the common questions asked by people with heart disease looking into a plant based diet. The rest of the book is comprised of the recipes. They are organized in the following chapters: Breakfasts Lunches Soups Hummus, Sauces, Spreads, Gravy and Salsas Appetizers and Sides Hearty Salads Salad Dressings Dinners Desserts We have tried several recipes and they have all been winners. Our favorites are probably the smoky little devils (like a potato based deviled egg), sweet corn sauce, and the sweet pancake puffs. I have used this cookbook more than the other plant based cookbooks I have.

With some adjustments it's an excellent cookbook
I've now made my way through bunch of the recipes in this book. Ann Esselstyn is a surprisingly good cook for being untrained. It's still too soon to tell, but this one may just become one of my 'go to' healthy cookbooks. However, remember this is my personal opinion, she does tend to over-season a bit. For example - her fat free hummus recipes are all really good - BUT - I lighten the spicy mustard in her base recipe. I like the milder taste of hummus for itself. The jalapeno & salsa corn muffins don't work - corn meal is by it's nature a mild flavored grain and the salsa completely takes over. The Middle Eastern Chickpea stew is reputably famous, coming from a bistro in Aspen. But we all thought the spices were simply over-the-top too heavy. Now, this sounds like a negative review - BUT - recipes are a matter of taste. When I made the Chickpea stew the second time and adjusted the spices to taste, it went from a 3 star dish to a 5 star in our rating system. The same situation with the Singapore Dal. But what makes the cookbook a keeper for me are the lunch recipes/ideas - I have made them all and they're all winners! We really like almost all of her veggie burgers, the Eat Loaf, the Kale-Stuffed Tugboats, the Polenta Pie. And her non fat dressings are wonderful - finally, non fat dressings that TASTE GOOD. This cookbook is healthy everyday home cooking and with these caveats I highly recommend it.

Finally vegan cookbook with recipes, which I like
I am a very picky eater, I tried to go on vegan diet twice. First time it lasted one and a half year, second time nine months. One of reasons - I didn't like food (I am not big fan of beans and vegan cheeses any kind), and also I think I can't tolerate vegan meat substitute made out of soy. Second time I went off vegan diet, because I started to feel sick, my digestion was completely out of whack, and I was week all the time. I did health DNA test, and it showed that my body has problem absorbing vitamin B. I decided to still eat 90% vegan and add once or twice a week eggs, fish, or meat. Now I had to find vegan recipes which I would like. Finally vegan cookbook with recipes, which I like. I've made two recipes from this book. First one was Eat Loaf, I did add a little bit Himalayan pink salt, and even it had beans, it was really good. I've made some changes: I added some sauce directly to mixture, also I added 2 tbsp of ground flex seeds to hold it together and I pulsated all in food processor. I baked it in large 10x13 pan (instead of bread pan), and I really recommend to do this way - you will get more flavor. Today I've made Savory Smoky Oars and it is good too. As always I've made some changes: added a little bit of salt, I didn't have and don't like can tomatoes, I used tomato paste instead (one mistake not adding a little bit more water for this substitute), I also didn't have liquid smoke, I added smoked paprika and a little bit chipotle pepper (I omitted hot sauce).

my kind of cookbook
I did not want another book on this subject as I have the program ideas from my research. I recommend The Engine 2 cookbook by Rip & Jane also. This one has a basic summary of the plan and some really good recipes for followers. I am not totally following this. I guess I am a 'flexitarian'. I see no reason not to consume eggs and cannot live without an occasional bite of cheese or fish/poultry. I do try to make this a rarity. I have followed this program for about a month. I feel better and have lost about 4 lbs. (I need to lose 10 to not have a BMI of overweight.) This program and cookbook allows me to indulge my powerful sweet tooth by eating fruit and EVEN SOME MAPLE SYRUP! My main goal is to lower my cholesterol count. My BP has lowered already. So here is hoping my LDL responds.

Not collecting dust with the rest of them.
I love this book. The recipes are detailed, easy to follow and don’t have weird ingredients. This book gets used about 2x a week (2x more than all the others sitting on my shelf). the only recipe we didn’t like was the stuffing but I will take the blame for it. I made it to take 2 hrs away for Thanksgiving. It needed to be prepared ahead and I used a crock pot instead of baking it so it could cook on the way there. Flavors were excellent but I did not like the texture (too mushy, almost watery). I think it would have been a bit more crunchy/crusty had it been baked in the oven. Other than that it is a wonderful book with excellent flavors IF you follow the recipes exactly.

A must have book
Everyone should have a copy of this book. It’s a great guide to helping you live a long healthy life and avoid heart disease and chronic pain. Really, it’s up to you to make this choice.

I don't like this book
I bought this book and the how not to die cookbook, and for my surprise this one has no good recipes, they don't make you feel full, almost vegetables and fruits but not many protein and carbs and they are really important, i don't recommend it if you want to learn how to make lunch recipes or dinner meals. Is more for the sides, if you want to learn that buy it.

The Esselstyns are amazing. Not too difficult, and not too many ingredients...
The recipes in this book are fairly easy, even for people like me who don't always follow measurements or ingredient lists exactly. Amongst others I've made the S.O.B Burgers (watch the YouTube video with Jane and Ann) - I put too much liquid stock in, and didn't have enough cooked rice - so instead of making burgers I cooked it as an S.O.B. bake in the oven instead ... it was yummy. The version of the book I have is missing the 'Hearty Salads' pages 151 to 167 though ... not sure if others have the same problem? Thanks Frances
