Another name for chop frills

Frills are sometimes called turkey booties, or fritters, which is all I know.

No. It is paper. You put it on bones after the roast comes out of the oven.

What is the chef’s name for chop frills?

Decorative paper holders ... frill is the Chef name for them

I put them on after it’s done cooking. For better results, cover the leg ends with foil during the cooking. Once done, remove the foil and put on these pretty frill wraps.
