How much would I use of this product if a recipe calls for 1 stalk of fresh celery?

1/2 cup for 1 medium stalk; 1 cup for 2 stalks. Be sure you soak in water or broth 5 minutes before you use it to hydrate.

After rehydration is the celery crunchy or soggy? would it be ok for potato salad?

Difficult to answer, since I do not know the result you expect in your potato salad, but I would say it will not be as crunchy as fresh celery, but will convey the celery taste. I have used this product in cooking such as soups and stews, and it is very satisfactory for that purpose. I find that it reconstitutes to a product which is not soggy, but the pieces remain very small and become crunchy, but not as crunchy as fresh celery.

The jar I received had a packet of silica gel stuffed down among the bits of celery. Is that normal? (The seal had also been broken.)

In response to your inquiry, the desiccant is placed in the jar to absorb any moisture that might be present, so yes, this is normal. As far as the seal being open, that may have come loose during transit, but if you have any question about the integrity of the product, please return it to Amazon for a refund.

I would like to powder this to make a seasoning blend. Do you all think this would work well to do that? Grind it then add it to the dry blend?

Probably would work fine. Taste might depend on how much you add. As with all dried herbs, crushing them in the hands or otherwise will help release some of the flavor and aroma.
